Amazing Vegetarian Chilli

The first time I ate this it was cooked by my husband’s oldest sister. It’s extremely delicious!

it is possible to add crispy fried ground beef to the mix when the beans are stirred in, if you prefer a meatier feast.

Melt 1 cup of salted butter in the bottom of one of your larger size soup pans.

Thinly slice 3 small zucchini and fry it in the butter

Add 10 thinly sliced mushrooms 

Stir fry these until they are soft and fragrant. Add no other spices at this time. 

Thinly slice 1 red onion

Thinly slice 10 or more garlic pieces

Thinly slice 1 sweet red pepper

Add these to the stir fry

Rinse 1 can chick peas and 1 can black beans and 1 can kidney beans until all the gloop is gone.

Open 2 cans unspiced tomato sauce and 1 can unspiced diced tomatoes 

Pour them in when the stir fry is soft.

Stir in 3 Tablespoons Chilli Powder (to your own taste) 1 teaspoon cinnamon, 1 tablespoon black pepper and 1 tablespoon salt.

Once powders are spread throughout, add 1 brick frozen spinach

When the frozen greens have thawed and mixed in with everything else it is finally time to stir in the beans. Once the beans are stirred in, the chilli should start simmering instead of the slow boil we were working with before.

Let simmer for at least 3 hours, or until you can no longer wait.

Serve with cornbread or with cheesy garlic bread.
