Rocky Road Squares

Rocky Road Squares

 

In a very large bowl, stir:

  • 2 cups Salted Peanuts
  • 1 bag Mini Marshmallows (approximately 8 cups)
  • Optional: 1 to 2 cups Coconut Flakes

LIne a 9×13″ baking pan with Waxed Paper or Saran Wrap

Over medium stove top heat in a saucepan, melt:

  • 1/4 Cup Butter
  • 1 tin Sweetened Condensed Milk
  • 1 and ½ cups Semi-Sweet Chocolate Chips

 

When smooth, remove it from the heat and IMMEDIATELY pour it into the bowl, over top of the dry ingredients. 

Stir quickly and thoroughly.

Spread it into the 13×9 pan lined with waxed paper.

Chill and then cut into squares.

When I was in middle school, we had special elective afternoons during the second half of January, February and the first half of March every single Friday. Over the years, I took weaving, pottery and woodworking. One year when I got on my bus, my friend Ron, who had been in cooking class that afternoon, had a few Rocky Road Squares he had made, each kid got to take home their share. He shared some of his with me, and then I wrote his recipe in the front page of the book I was reading at the time, Judy Blume’s “Blubber”. I kept that page until I lost my recipe box at Lynn’s.
