Your lentils do not need to be red to be used in this soup, any colour lentil will do! I merely love the colour of the red ones.
Gather:
- A thick slice of ham: approximately 1/2 inch thick and 5 inches long and 3 inches wide, cut into cubes, or slice some sausages and toast them till crsipy.
- 1&1/4 cup Dried Lentils
- Broth powder or liquid broth
- 1 minced Garlic Clove
- 2 carrots, chopped or sliced
- 1/2 cup green onions, chopped
- 1 can diced tomatoes
Bring to a boil, then simmer together until the carrots are tender and the lentils are soft:
- 6 cups liquid: water or broth
- 1 to 1&1/4 cup red lentils
- Broth powder as needed to make the liquid taste hearty like broth
- 2 chopped carrots
- 1/2 cup chopped green onions
- 1 can diced tomatoes in sauce
- Spices to taste, best options are: salt, marjoram, cumin, curry, parsley, black pepper, oregano
Once the soup is simmering, then add the chopped ham or the sliced toasted sausages.
Serve with popovers or scones or garlic toast or french bread&olive oil
