Raisins and Bran Muffins

Raisins and Bran Muffins that I used to make when the children were young and we went on road trips. There was always time to make a batch before we left, it’s quick! I also filled thermoses with hot chocolate, coffee and tea. We’d have a feast on the road before we knew about the expensive convenience of the coffee shop drive thru.

Heat oven to 350’

Grease muffin tins or use paper muffin cups

Soak: 1 cup milk, 1 Tbsp realemon juice, 1½ cups bran flakes (not the boxed cereal kind, but the bags you can find in the baking section of the store)

Mix together: ⅓ cup oil, 1 egg, ⅔ cup molasses, ½ tsp vanilla

Add it to the milky bran mixture

Stir together: 1¼  cup white flour, 1 tsp baking powder, 1 tsp baking soda, ½ tsp salt

Add it to the bran mixture, stirring just until blended, don’t over stir

Stir in ½ cup raisins

Spoon in to muffin cups

Bake 15-20 min
