To me, if the peanut butter cookies are made well, they always remind me of childhood visits with my grandmother.
A couple times a month our family would make the half hour drive to the farm where my father’s parents still lived. They would warmly welcome us with dry, scratchy kisses from him and wet, sloppy kisses from her, and she would serve us kids cherry kool-aid and delicious homemade peanut butter cookies.
Here’s how to make them:
Peanut Butter Cookies
Preheat oven to 350
With an electric mixer, cream together:
- ½ cup soft Butter
- ½ cup Light Brown Sugar
- ½ cup White Granulated Sugar
Once smooth and creamy, mix in:
- 1 Egg
- ½ cup Peanut Butter
- ½ teaspoon Salt
- ½ teaspoon Baking Soda
Then, slowly blend in: 1 cup Flour
When it is all smooth, add 1 teaspoon Vanilla and mix well.
Optional add: stir in 1 cup semi-sweet chocolate chips and/or 1 cup coconut flakes.
With clean hands, roll the dough into small balls and place those balls on a greased cookie sheet. Press each ball flat with the tines of a fork.
Bake for 10-12 minutes
Should make around 4-5 dozen, depending on the size of the balls you make.
