Stamppot Boerenkool is a traditional Dutch supper made with potatoes, kale and sausage, topped on your plate with butter and vinegar.
Oma would fry the Sausages while boiling the peeled Potatoes in water with washed and shredded Kale to make the Sausage nice and crispy, but other Omas boil the sausage right on top of the vegetables, in the same pan.
Once the Potatoes and the Kale are tender, they would get mashed together.
The sausage would get sliced and then stirred in with the mashed vegetables, or served on top of them, depending on family tradition.
Each plate would receive some of this mouth watering mix, and then each person would melt some butter on top and then drizzle some vinegar over top before stirring it all in together.
Cheap, scrumptious, nutritious and filling!
Along the same line, is Stamppot Hutspot
In this case, you boil peeled Potatoes and peeled and chopped Carrots until the vegetables are tender.
While the vegies are cooking, you’re frying ground beef with onions on the side.
When all is ready, you mash the vegies and stir the meat and all of its grease in with the veggies.
One thing we discovered while camping/hiking, is the convenience of dried food which makes Boerenkool almost instant.
You fry cubes of Spam in a pan to make them crispy, and boil some water.
Use the boiling water to reconstitute Dehydrated Potoatoes and Dried Stinging Nettle Flakes or Dried Kale Flakes, you stir it all together and then top with melting Butter and a sprinkle of Vinegar.
Easy peasy rice and cheesy!
