Olie Bollen

Here’s how to make Dutch donuts, called oliebollen.

Oliebollen are dough balls, made from a batter containing flour, eggs, yeast and milk and are deep fried in hot oil.  Slices of peeled apple or soaked raisins are added in. Deep fried balls are set aside to drain, then dipped in icing sugar.  The apple ones are dipped in cinnamon sugar.

Start the night before:

Soak 1 cup raisins in 2-3 cups water, overnight.

 

An hour before you start:

Boil a few potatoes (optional) mash them, (set aside a cup and eat the rest. 🙂

Slowly heat some milk. Set aside 2 cups (and make hot chai with the rest.)

 

Gather:

2 cups warm milk or warm water

4 eggs

¾ cup granulated white sugar

4 cups white flour

2 Tbsp yeast, soaking in ½ cup warm water

3 tsp salt

1 cup raisins, soaked and drained or slices of peeled apples

2 Tbsp oil

Optional: 1 cup mashed potatoes

 

Stir warm milk or warm water, sugar, salt, oil, yeast and eggs until sugar is dissolved.

Stir in flour and optional potatoes until smooth

Stir in raisins or apples

Let it rise in a warm place for 2 hours

Heat deep fryer or a pan of oil to nearly high

Drop dough by the spoonful or ice-cream-scoopful into the hot oil

Let it get tanned and cooked on one side, then flip and cook the other side

Cool on paper towels, let the excess oil drain off.

 

Sprinkle or dip the raisin donuts with icing sugar

Sprinkle or dip the apple donuts with cinnamon and icing sugar
