Mushroom Eggs

Mushroom Eggs are good for breakfasts and for midnight snacks!

 

In a hot fry pan, melt ΒΌ cup butter

 

Fry sliced mushrooms and stir them around until some of them begin to crisp up

 

Add a couple handfuls per person of spinach leaves on top

 

Add spices of choice. (I like salt, pepper, and liberal amounts of ginger and turmeric)

Stir it around a bit

 

Break 2 eggs per person on top, let it sit until the edges of the egg whites begin to turn white.

Stir them around a bit, the spinach will shrink to less than half.

 

When the eggs are no longer gloopy and starting to look cooked, but nothing is drying out yet, add a handful of grated cheddar per person.

 

Let it sit and cook until the cheese melts, stirring around a little bit.

 

Serve with buttered toast.
