Corn Bread

Corn Bread (as a meal)

Finished product will be sausages, onions and mushrooms chopped up and baked inside a square pan of cornbread. You can prefry the mushroom, onion and sausage pieces before stirring them in to the recipe if you want, but they can be stirred in uncooked as well.

Serves nice with tomato soup.

Preheat oven to 400 degrees.

 

Mix the following then set it aside to moisten and thicken for ten minutes:

  • 1.5 cups Dry Yellow Cornmeal
  • 2.5 cups milk

In the dry bowl, stir the following together:

  • 2 cups Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 2/3 cup (or less) Sugar

In the wet bowl, stir the following together:

  • 2 Eggs
  • 1/2 cup Olive Oil
  • 1 cup Grated Cheddar

Stir the wet mixture in with the dry mixture in with the cornmeal mixture.

Stir the meat and veg in.

Pour into a greased baking dish and bake at 400 degrees for 30-35 minutes. When a toothpick poked into the centre comes out clean, it is done and you can cut it into squares for your meal.
