Basic Bread

Bread

1.

In a large bowl, whisk:

  • 1/3 cup Oil: Olive or sunflower or avocado
  • 1/3 cup Honey
  • 1 Tablespoon Salt
  • 3 cups Very Warm (but not hot) Water

Whisk this together and wait until it becomes lukewarm.

Add 2 Tablespoons fresh, Fast Rising Yeast (check the best before date, it matters for yeast)

Set aside for 10 minutes while you…

Wash your hands again

Prepare some tea for afterwards

Turn on some nice music

Assure you have some clean work space in the kitchen

Whisk in:

2 cups Robin Hood Best for Bread White Flour (or whatever variety you prefer)

Take away the whisk before it gets too gunky, and then start using tyour closed fist as you knead in:

5-8 more cups Flour (the precise amount depends on the atmosphere of the day)

Cover it and let it rise in a warm, moist place for at 2 hours, punch down, let rise for another 2 hours, punch down again.

7.

At 3.5 hours, preheat Oven to 350 Fahrenheit.

Butter 3 clean bread pans to grease them.

Knead dough once more, then divide dough into smooth thirds and place each third in a pan. Drizzle some Olive oil or butter over top for  a nice crispy crust.

Cover the 3 pans with a clean tea towel and let rise for at least 20 minutes more while the oven heats.

Bake at 350 Fahrenheit for 40 minutes or until loaves are golden brown and fragrant.

After baking, turn the loaves out of pan and onto cooling rack while still hot, so the crust stays crispy and doesn’t get soggy.

 

Options:

Roll it flat, top and then slice before baking to make special rolls:

Sweet rolls:

Cinnamon, soft raisins, butter and brown sugar sprinkled on before rolling creates cinnamon rolls. (Top with milk and icing sugar sauce before baking.)

Savoury rolls:

Garlic, Nacho spice and grated cheddar creates a great bun for serving with chili, sloppy joes, or pea soup.
