Make your own Toasted Granola Cereal!
350 Fahrenheit for 20-25 minutes, stirring every 5-7 minutes
Melt inside the oven while it heats up, in a large roasting pan:
1 and ½ cups Butter or Coconut Oil (Though Olive Oil is a healthier oil to eat, it does not do as well when heated)
1 cup Brown Sugar
1 cup Honey
1 Tablespoon Salt
1 Tbsp Vanilla extract
While it softens, collect in a large bowl:
9 and ½ cups Old Fashioned Oats – Be sure that you do not use Quick Oats or Instant Oats because these types do not work well. Old Fashioned or Steel Cut Oats are fine though.
3 and ½ cups of your favourite Nuts, like Almond, Walnut, Hazelnut, Pecan, Cashew, Peanut – Choose how ever many of whatever kind you want, just make sure the total amount measures 3.5 cups.
½ cup of your favourite Seeds, like Sesame, Chia, Sunflower – Choose how ever many of whatever kind you want, just make sure the total amount measures half a cup.
2 and ½ cups Coconut Flakes
Stir the dry ingredients thoroughly, then pour them into the roasting pan with the warm, melted ingredients and stir again.
You can toast your granola on cookie sheets, but I know myself to be a messy cook, so I need the higher walls of a large roasting pan to keep all the good food inside the pan and out of the oven.
Bake in shallow pans or large roasting pan for 20-25 minutes, but remove from oven every 5-7 minutes for a minute to stir it to ensure even toasting.
Let your Granola cool before scooping it into storage container, so that it stays nice and crisp. Warm granola in a sealed container will create moisture and result in softer granola.
This Granola Cereal goes very well with homemade yoghourt and fresh or frozen berries.
