Anyone have the beet and carrot soup recipe from Cindy D? I used to have it memorized…

Fry onion garlic and carrots, add beets and don’t forget stock and cream

Was it like… 6 carrots and 3 beets or something?

When I’ve been making it I use maybe three cups of beets, six cups of carrots, one onion, quite a lot of garlic and then three scoops of powdered stock and once it’s all cooked I blend it and stir in about a cup of heavy cream

 

Beet and Carrot Soup from Cindy D

  • 1 Tablespoon oil
  • 1 cup chopped onion
  • 3 medium beets, chopped
  • 6 medium carrots, chopped
  • 5 cloves minced garlic
  • 1 Tablespoon (or more) grated ginger
  • 6 cups broth or water
  • Grated orange rind
  • salt and pepper

 

  • Saute onion in oil.
  • Add carrots, ginger, and garlic.
  • Add beets and broth/water.
  • Cook for about half an hour.
  • Add orange rind.
  • Puree with stick blender, right in the pan.
  • Add salt and pepper.
  • option: season with cream cheese.

Good hot or cold.
