Anyone have the beet and carrot soup recipe from Cindy D? I used to have it memorized…

Fry onion garlic and carrots, add beets and don’t forget stock and cream

When I’ve been making it I use maybe three cups of beets, six cups of carrots, one onion, quite a lot of garlic and then three scoops of powdered stock and once it’s all cooked I blend it and stir in about a cup of heavy cream
Beet and Carrot Soup from Cindy D
- 1 Tablespoon oil
- 1 cup chopped onion
- 3 medium beets, chopped
- 6 medium carrots, chopped
- 5 cloves minced garlic
- 1 Tablespoon (or more) grated ginger
- 6 cups broth or water
- Grated orange rind
- salt and pepper
- Saute onion in oil.
- Add carrots, ginger, and garlic.
- Add beets and broth/water.
- Cook for about half an hour.
- Add orange rind.
- Puree with stick blender, right in the pan.
- Add salt and pepper.
- option: season with cream cheese.
Good hot or cold.
