Berry Custard Cake, like Clafoutis
Preheat oven to 425
Put 3 Tbsp Butter in a large rectangle pan, place that pan in the oven and let the heating oven melt the butter. Once the butter has melted, roll the liquid around the pan to grease the whole pan
In a blender, combine:
- 8 Eggs
- ½ cup Honey
- 2 and ½ cups Milk
- 1 tsp Vanilla extract
- 2/3 cup white Flour
- ½ tsp ground Nutmeg
- 1 tsp Salt
Blend it until smooth
By this time your butter will be melted and you will have already swished it around the hot pan – remember to wear an oven mit! – to grease it.
Pour the batter into the pan, on top of the melted butter.
Sprinkle Raspberries, sliced Strawberries, or pitted sweet Cherries on top, fresh or frozen.
Bake in the heated oven for 20-25 or 30-40 minutes or until it is puffed and golden.
