Cloud Cookies
In a cold, clean bowl combine:
3 Egg Whites
A few grains Salt
½ teaspoon Cream of Tartar
Beat at medium speed until double in volume
Increase speed and begin to add very gradually
¾ cup Sugar
This process should take between 5-10 minutes until every grain of sugar has been dissolved into the egg whites.
Fold in ½ teaspoon Vanilla extract
Line clean cookie sheets with clean paper
Preheat oven to 250 Fahrenheit
Using 2 teaspoons, drop the meringue on to the paper lined cookie sheets
Bake in a slow oven:
250 degrees for one hour
Then turn off the oven and leave the cookies in the cooling heat for one hour longer
