Zandgabakjes or Sand Tarts – Oma
2 cups very soft Butter
1 and 1/3 cup Brown Sugar
1 and 1/3 White Sugar
2 teaspoons Almond Extract
2 large Eggs
4 cups Flour
1 teaspoon Baking Soda
Sif the baking soda with the flour
Mix all ingredients well with a wooden spoon
Bake in shallow muffin tins for 15-20 minutes at 325 degrees – a low oven makes for a nice, chewy treat
Store in a closed container with a slice of bread to keep them soft
Top each tart with Mocha Icing
