Encouraged by the success of last week’s Beef Pot Roast and the subsequent leftovers, I decided to try a chicken recipe for this week. I’m hoping for the same proportions: One meal hot out of the crockpot, one meal of leftovers, and one final serving for a hungry person to eat when they are alone.
Ingredients:
- fresh or frozen vegies: bell peppers, green beans and or brocolli.
- orange marmalade
- ground ginger
- chopped garlic
- soy sauce
- rice wine vinegar
- toasted sesame seed oil
- cornstarch
- salt and pepper
- sesame seeds
- avocado oil
- 4 boneless, skinless chicken breasts
- jasmine rice (is my favourite kind, choose your favourite kind)
What to do:
- Moisten the bottom of the crockpot with about 3 tablespoons avocado oil.
- Place about a half cup to a cup cornstarch powder and about a tablespoon each of salt and pepper in a large ziplock bag.
- Cut the chicken pieces into narrow chunks, then place them in the bag
- Wash your hands and wash the cutting board and knife.
- Seal the bag, the shake the chicken in the powder until every piece is coated.
- Place the chicken in the bottom of the crockpot, on top of the avocado oil.
- Sprinkle sesame seeds on top of the chicken.
- In a large ziplock bag, mix: 1.5 – 2cups orange marmalade, 1/4 cup soy sauce, 3 tablespoons rice wine vinegar, 3 tablespoons toasted sesame seed oil, a teaspoon ground ginger and a tablespoon chopped garlic. Squeeze it all together. Spoon this mixture into the crock pot, careful to cover every single piece of chicken.
- fill the rest of the crockpot with a frozen stir fry vegie blend.
- Cook on high setting for at least 4 hours.
- An hour before mealtime, start prepping your rice.
- 1 cup rice and 1.5 cups water, bring to a boil then let it slowly simmer. Keep the lid on the pan.
- Serve the crock pot sauce on top of or beside the rice. Sprinkle each serving with more sunflower seeds. All leftover rice can be stirred into the leftover crock pot concoction to be refrigerated when cool, and reheated for another delicious meal later in the week.
