Red Lentil Soup

Posted on August 9, 2024August 9, 2024 by Joy

Your lentils do not need to be red to be used in this soup, any colour lentil will do! I merely love the colour of the red ones.

Gather:

  • A thick slice of ham: approximately 1/2 inch thick and 5 inches long and 3 inches wide, cut into cubes, or slice some sausages and toast them till crsipy.
  • 1&1/4 cup Dried Lentils
  • Broth powder or liquid broth
  • 1 minced Garlic Clove
  • 2 carrots, chopped or sliced
  • 1/2 cup green onions, chopped
  • 1 can diced tomatoes

Bring to a boil, then simmer together until the carrots are tender and the lentils are soft:

  • 6 cups liquid: water or broth
  • 1 to 1&1/4 cup red lentils
  • Broth powder as needed to make the liquid taste hearty like broth
  • 2 chopped carrots
  • 1/2 cup chopped green onions
  • 1 can diced tomatoes in sauce
  • Spices to taste, best options are: salt, marjoram, cumin, curry, parsley, black pepper, oregano

Once the soup is simmering, then add the chopped ham or the sliced toasted sausages.

Serve with popovers or scones or garlic toast or french bread&olive oil
